If you love Chipotle Mexican Grill, try this at-home Chipotle-style bowl with Homemade Avocado Cilantro dressing. It is a treat for the senses, perfect for weeknight meals or doubled for weekend entertaining.

INGREDIENTS

  • 1/2 cup rice
  • 1 tomato
  • 1 can of black beans
  • 1/2 a rep pepper
  • 1/2 a white onion 
  • Romaine lettuce
  • 1/4 cup cheese
  • 1/2 avocado

DRESSING

  • 1/2 avocado
  • Handful of cilantro
  • 1 cup of water
  • 2 TBSP extra virgin olive oil
  • 1 tsp salt
  • 3/4 tsp chili powder
  • 1 TBSP lime juice

Directions:

  1. Cook rice as directed, add in extra chopped cilantro and lime juice for an added kick
  2. Chop up pepper and onion, sauteed in olive oil for ~4-6 minutes and add salt, pepper and chili powder to taste
  3. Dice up tomato
  4. Drain can of black beans and sauteed over EVOO for ~8-10 minutes-add salt/pepper/onion powder to taste
  5. Make dressing-combine all ingredients in food processor, then add to romaine lettuce
  6. Combine all ingredients in a bowl, adding cheese and avocado on top, feel free to add a protein of choice but this is also great on its own!
